If we translate Paruthi Paal in english, it turns out to be Cotton Milk. It is a sweet dish, thicker than soups, made from rice flour, cardamom, ginger, and palm sugar. It has small quantity of cotton seeds extract and so is the name. The dish is typical in Madurai and you can find push carts serving this dish in the streets, usually in the evening.

Parotta

Parotta is a multi layered paratha. It is made using flour, some people add butter milk and some add coconut milk, and then shallow fry it on a pan. Parotta has numerous layers, sometimes also called as Laccha paratha. You can try this dish for lunch at Sulthan’s in Madurai.

Jigarthanda

It is Madurai’s take on the Falooda and Lassi, popular drinks in India. Jigarthanda is basically a hand churned ice cream mixed with condensed milk and tree gum. People believe that the Nawabs of Arcot brought this dessert to Madurai.

Kari Dosai

Kari Dosai is a three tier dosa. The base layer is plain dosa, the middle layer is omelette, and the top layer has minced meat. This dish in Madurai is typical to the cow herders known as Konars. You can savour yourself with the authentic Kari Dosai at the Konar Mess.

Kalkandu Sadam

It is a saurashtrian dish, brought in Madurai by the saurashtrians from Gujarat. Kalkandu is a sweet rice dish with nuts and local spices. This is one of the dishes which is unique in Madurai.
